The Bistro at Billy Goat’s combines memorable ambiance with great food and drink. The Bistro offers fireplace seating, rustic atmosphere, a delicious menu, and a beautiful full service bar. Served in a relaxed, and cozy setting, our Gastropub foods are a perfect way to enjoy a casual dinner with friends, or a fun night out on the town. From succulent Pork Osso Bucco, to slow-smoked Ribs, Burgers and house made soups, we offer something for everyone.

The Bistro features 10 beers on tap, and the most extensive selection of Single Malt Scotches and Bourbons in the region.

APPETIZERS

Hot Spinach Artichoke DipArtichoke and spinach dip with fresh garlic and Parmesan cheese, served warm with crostini for dipping. $7

Pistachio and Honey-baked Brie- Warm baguette bread and crisp green Granny Apple slices accompany creamy baked Brie topped with Colorado Honey and toasted pistachios.  $11

Fontina Chive Risotto Cakes - Rich, creamy risotto with Fontina cheese and herbs, coated with delicate Panko bread crumbs and pan-seared to crispy perfection , topped with a fresh tomato basil compote.  $10

Panko-crusted CalamariPan-seared Panko- crusted Calamari steak with a chili citrus aioli. $9

Pan-seared Salmon Cakes- Savory Panko-breaded salmon cakes with our own mixture of diced peppers, onions and Cajun-style seasonings, served with a cool lemon-dill yogurt sauce $10

Beef Brisket & Bacon Sliders- Tender beef brisket, and savory bacon on locally-made brioche buns, w/ sides of chipotle mayo, whiskey BBQ sauce, whole grain mustard, onion ring nests and assorted cheeses. $12

Miner’s Marinated Beef Salad Tender marinated beef, chopped greens, crisp bacon, candied walnuts, dried cranberries, bleu cheese crumbles and our Sherry Vinaigrette. $13 (order without walnuts for a Gluten free option)

Silvershield Salmon Salad7-oz soy-glazed Salmon with our house made Lemon Soy Ginger Vinaigrette, mixed greens, carrots, Napa cabbage, green onions, toasted almonds and oranges. Sweet and spicy. $15

Sarah’s Tuscan Chicken Salad – Mixed greens, sun-dried tomatoes, Kalamata olives, capers, fresh tomatoes, pine nuts and Parmesan cheese with a tender grilled chicken breast and balsamic vinaigrette.  $13 (Gluten free)

Soup of the Day- Bowl or Cup

Brauhaus Burger½ lb Black Angus Beef, flame grilled, and served on a locally-made brioche bun, with Swiss and cheddar cheeses, chipotle mayo, and crispy onion ring nests. $10

Red Mountain Ribs (slow-smoked in house!) – 1lb of slow-smoked pork ribs, with our whiskey and bacon BBQ sauce, stacked high and served with lemon-whipped potatoes, and crunchy vegetable slaw. $20

Bourbon Peppercorn Ribeye11plus oz. hand-cut Black Angus Ribeye with bourbon and green peppercorn sauce, tender asparagus,  lemon-whipped potatoes. $27  add sautéed shrimp for $26

Pork Osso Bucco (House Favorite)- Tender red-wine braised pork shank, and buttered asparagus, served with creamy polenta, and a traditional garnish of lemon zest, garlic and parsley. A local favorite. $22

Farmer’s Market Risotto (vegetarian)- delicate Arborio rice with fresh, seasonal local produce (ask your server about tonight’s veggies), shallots, fresh lemon zest, Mascarpone and parmesan cheeses.  $14 or add chicken, salmon or shrimp

Prosciutto-Wrapped Halibut- Halibut filet wrapped and seared with savory Italian prosciutto, atop a bed of roasted root vegetables, with a fresh lemon and rosemary broth $25

Alpenglow Pasta- Shrimp and fettuccini pasta with toasted pine nuts, grape tomatoes, asparagus, fresh lemon zest and basil in a delicate cream sauce. $18 (available with Gluten free pasta)

Old World Pasta- Chicken with rigatoni pasta, artichoke hearts, tomatoes, capers and basil, tossed in a roasted garlic, chardonnay sauce and topped with parmesan cheese. $15 (available with Gluten free pasta)
